Gratin aux Oignons / Onion gratin

Per il nostro ultimo post del 2013, diamo il benvenuto alla nostra bloggatrice ospite favorita, e più bella: mia moglie Jeanette.

Qua in America, ci sono pochi libri di cucina che sono più venerati, e più veramente importanti, di Mastering the Art of French Cooking di Julia Child (con Simone Beck e Louisette Bertholle). Faccio spesso i dolci, ma ammetto che non mi piace fare la pasta brisé. Perciò sono rimasta molto contenta quanto ho letto il commento di Julia che, in molte delle ricette per la quiche, se si ometta la pasta brisé e si versi il ripieno in una teglia da forno, il piatto diventerebbe un gratin. La ricetta che segue, dunque, è la Quiche aux Oignons senza la crosta, ergo il Gratin aux Oignons.

Ho preparato questa ricetta alcune volte. Mi piace molto, e spero che piacerà pure a voi. Felice Anno Nuovo!

Ingredienti

900 g cipolle tritate
45 g burro
1 cucchiaio olio
½ cucchiaio farina
2 uova o 3 tuorli
160 ml panna da montare (panna grassa)
1 cucchiaino sale
⅛ cucchiaino pepe nero
un pizzico di noce moscata
55-60 g Emmentaler grattugiato
15 g burro, tagliato a tocchi la grandezza dei piselli

Preparazione

Fate cuocere le cipolle in una padella pesante con l'olio e il burro, a fuoco molto basso, girando di tanto in tanto, fino a quando le cipolle saranno estremamente tènere e di un colore giallo-dorato. Questo passo impiegherà circa un'ora.

Cospargete con la farina, mescolate bene e cuocete lentamente per 2 o 3 minuti. Lasciate raffreddare leggermente.

Preriscaldate il forno a 190 gradi.

Sbattete le uova o i tuorli in una ciotola con la panna e i condimenti finché ben mescolati. Gradualmente mescolate le cipolle e una metà del formaggio. Controllate i condimenti. Versate in una teglia da forno. (Io ungo la teglia, ma non sono sicura che sia necessario.)  Distribuite il resto del formaggio e distribuite il burro sopra. Fate cuocere nel terzo superiore del forno preriscaldato per 25-30 minuti, finché il gratin sarà gonfiato e dorato.

Here in America, there are few cookbooks that are more revered, and more truly important, than Mastering the Art of French Cooking by Julia Child (with Simone Beck and Louisette Bertholle). I do a lot of baking, but I admit that I don't enjoy making pie crusts. Thus, I was very pleased to read Julia's comment that, in many of the quiche recipes, by simply omitting the crust and pouring the filling into an oven pan, the dish becomes a gratin. What follows, therefore, is Quiche aux Oignons without the crust, or Gratin aux Oignons.

I have made this recipe several times. I enjoy it very much, and I hope you do, as well. Happy New Year!

Ingredients

2 lbs. minced onions (about 7 cups)
3 Tb butter
1 Tb oil
1½ Tb flour
2 eggs or 3 yolks
⅔ cup whipping cream
1 tsp salt
1/8 tsp pepper
Pinch of nutmeg
2 ounces (½ cup) grated Swiss cheese
1 Tb butter cut into pea-sized dots

Preparation

Cook the onions in a heavy skillet with the oil and butter over very low heat, stirring occasionally until they are extremely tender and a golden yellow. This will take about an hour.

Sprinkle with the flour, mix well, and cook slowly for 2 or 3 minutes. Allow to cool slightly.

Preheat the oven to 375 degrees.

Beat the eggs or egg yolks in a mixing bowl with the cream and seasonings until blended. Gradually mix in the onions and half of the cheese. Check the seasonings. Pour into an oven dish. (I grease it, but I'm not sure that's really necessary.) Spread on the rest of the cheese and distribute the butter over it. Bake in the upper third of the preheated oven for 25 to 30 minutes, until the gratin has puffed and browned.

Mungibeddu III

Il sole ardente tramonta sulla montagna fumante ...

Grazie a un cielo chiaro a Taormina e una mattina libera a Boston, ho potuto catturare questi screen shot, sempre dal webcam dell'albergo Villa Ducale di Taormina (http://www.villaducale.com/media-gallery/etna-webcam). Ciascun di queste foto è stata scattata a distanza di 3 minuti. In particolare, la differenza fra 17:18 and 17:21 è stata strepitosa! Non si sa mai che succederà minuto a minuto. Nelle ultime foto nella series, il fumo è stato illuminato con un color di rosso così intenso che è quasi sembrata la lava. Niente lava, solo fumo. Le meraviglie dell'Etna non conosce limiti!

Thanks to a clear sky in Taormina and a free morning in Boston, I was able to capture these screen shots, again from the webcam from the hotel Villa Ducale in Taormina (http://www.villaducale.com/media-gallery/etna-webcam). Each of these photos was taken 3 minutes apart. In particular, the difference between 17:18 and 17:21 was sensational! One never knows what will happen minute to minute. In the last photos in the series, the smoke was illuminated with such an intense red color that it almost seemed like lava. No lava, just smoke.  The wonders of Etna know no bounds!

Pranzo Natalizio / Christmas Dinner

Una volta, un architetto mi disse che la commissione più difficile da compiere è un terreno quadrato perfetto e senza difetti. Come creatore, capii subito quel che volle dire. Le restrizioni e le condizioni accendono la creatività. Pensate del David di Michelangelo. Il blocco originale di marmo era difettivo. Per evadere il difetto, lo scultore fece che David s'inclina un po' a un lato – facendolo anche più realistico!

Quest'anno il pranzo di Natale ha avuto una serie di condizioni da rispettare. Un figlio è allergico alle noci che crescono sugli alberi. A un altro figlio non piace la salsa di pomodoro (!), ma i suoi tre cibi preferiti sono: il bacon; il gravy; e la minestra di brodo e pasta. Il contorno preferito di mia moglie è la puré di patate con gravy – ecco un altro voto per il gravy. Io sono mangiafoglie e volevo qualcosa di verde. E stavo ancora sognando la Lonza Lardellata di Scarlett. In ultimo, i nostri orari di lavoro hanno dettato che questo non poteva essere un pranzone enorme e complesso. Quella era la restrizione più importante da rispettare.

Notate che l'ingrediente principale del pranzo è stato in realtà il brodo di maiale. E l'ho preparato nella crock-pot (pentola a cottura lenta); ci sono voluti cinque minuti per preparare!
   Once, an architect said to me that the most difficult commission to fulfil is a perfect, square plot of land without any defects. As a creator, I immediately understood what he meant. Restrictions and conditions ignite one's creativity. Think of Michelangelo's David. The original block of marble was defective. To avoid the defect, the sculptor made David lean a little bit to one side – making him even more lifelike!

This year's Christmas meal had several conditions to meet. One son is allergic to tree nuts. Another son doesn't like tomato sauce (!), but his three favorite foods are: bacon; gravy; and soup with broth and pasta. My wife's favorite side dish is mashed potatoes with gravy – that's another vote for gravy. I'm a mangiafoglie and wanted something green. And I was still dreaming of Scarlett's Lonza Lardellata. Finally, our work schedules dictated that this couldn't be a huge, complex meal. That was the most important condition to meet.

Note that the principal ingredient of the meal was actually the pork stock. And that I made in the crock-pot; it took five minutes to prepare!

Brodo di maiale

Ho preparato il brodo nella crock-pot. Aggiungete gli ingredienti, premete un pulsante, e basta! Niente più da fare!

Dopo di stare nel frigo, lo "schmalz" sarà venuta a galla e sarà solido, facile da rimuovere. La mattina di Natale rimuovetelo, mettelo in una piccola ciotota, e riscaldatelo nel microonde per 30 secondi, abbastanza per scoglierlo ma non di più. Poi mettete la ciotola nel frigo.

Primo piatto
Minestra

Ingredienti

500 g pasta per minestra (io orzo integrale)
brodo di maiale (vedete sopra)
formaggio frescamente grattugiato

Preparazione

Fate bollire la pasta in abbondante acqua salata. Scolatela, trasferitela in una ciotola o pentola, e aggiungete 250 mL di brodo (ma non di più, solo abbastanza che la pasta non si attachi). In ciascun piatto, ponete della pasta e del brodo. Servite con formaggio.

Click here for the recipe, substituting the turkey with the ham.  Choose a cut of pork that contains the bone.  I used the neck.

I made the stock in the crock-pot. Add the ingredients, press one button, and that's it! Nothing more to do!

After being in the fridge, the "schmalz" will have risen to the top and will be solid, easy to remove. Christmas morning, remove it, put it in a little bowl, and heat in the microwave for 30 seconds, enough to melt it but no longer. Then put the bowl in the fridge.

Ingredients

1 lb soup pasta (I used whole-wheat orzo)
pork stock (see above)
freshly grated cheese

Preparation

Boil the pasta in abundant salted water. Strain it, transfer it to a bowl or pan, and add 1 ladle-full of stock (but no more, only enough to prevent the pasta from sticking). In each plate, place some pasta and some broth. Serve with cheese.

Lonza avvolta nel bacon

Il bacon è lo stesso taglio di maiale come la pancetta. È affumicato a freddo (dunque viene cotto prima del consumo). Si può affumicarlo al melo, ma è più comune, e più delizioso, affumicarlo al noce americano (hickory). Un sapore fenomenale, questo hickory! Mi spiace moltissimo che gli italiani non hanno quest'albero e quindi non conoscono il sapore del suo legno.

Per le erbe fresche, non avevo molte scelte – data la temperatura fuori di -7 gradi! Ma l'erba che rimane viva e verde durante l'inverno più severo è la mia amata santoreggia montana. Il sapore è a metà strada tra il rosmarino e il timo, perfetto per questo piatto. 
  
Second Course
Pork loin wrapped with bacon

Bacon is the same cut of pork as pancetta.  It is cold-smoked (thus it has to be cooked before being eaten). It can be smoked with applewood, but more common, and more delicious, is to smoke it with hickory. What a phenomenal flavor, hickory! I deeply regret that Italians do not have this tree and thus don't know the flavor of its wood.

For the fresh herbs, I didn't have many choices – given the outside temperature of 20 degrees!  But the herb that remains alive and green throughout even the severest winter is my beloved winter savory.  The flavor is half-way between rosemary and thyme, perfect for this dish.

Ingredienti

1 lonza di maiale, c. 1,15-1,35 kg
400-500 g bacon, affettato spesso
erbe fresche (io santoreggia montana)
4 spicchi d'aglio, squartati longitudinalmente (i.e., filettati)
sale
pepe nero, frescamente macinato
un pizzico di noce moscata, frescamente macinata
olio extravergine d'oliva (oppure strutto)
2 grandi cipolle, squartate
250 ml brodo di maiale (vedete sopra)
250 ml vino bianco

Preparazione

Con un coltello, perforate la lonza ed inserite le fette d'aglio. Coprite la lonza con il sale, pepe, erbe, e noce moscata. Avvolgete la lonza con il bacon. Fissate il bacon alla lonza con lo spago da cucina. (Simultaneamente, fate lo stesso al lato inferiore. Decidete voi la migliore maniera di compiere quest'impresa!)

Ungete una teglia per arrosti. Aggiungete la lonza. Disponete la cipolla intorno alla lonza. Aggiungete un filo d'olio (o una noce di strutto) sopra il tutto. Aggiungete il brodo alla teglia.  Fate cucinare a 200 gradi per un'ora circa. (Dipende la grandezza della lonza.) Capovolgete la lonza al punto intermedio della cottura.

Come ultimo passo, aggiungete il vino alla teglia, accendete il forno alla fiamma più alta, e fate rosolare ciascun lato della lonza per 2-5 minuti (per darle un bel colore, non per bruciarla).

La carne è pronta quando la temperatura interna raggiunge 68 gradi.

Rimuovete la lonza e le cipolle dalla teglia. (Ma lasciate TUTTO il resto della bontà nella teglia.) Disponete la lonza su un tagliere, coprite con carta di alluminio, e fate risposare per 10-15 minuti prima di tagliarla.

Per fare il gravy

Ingredienti

farina (io integrale)
brodo di maiale

Preparazione

Mettete la teglia meravigliosamente sporca su due fornelli. Aggiungete farina, approssimativamente la stessa quantità del grasso (anche se sia difficile da calcolare. Il roux sempre consiste di farina e grasso in quantità uguali). Appena aggiungete la farina alla teglia, subito cominciate a grattare la teglia con una spatola di acciaio. Aggiungete il brodo quanto necessario. Girate bene, sempre grattando la teglia. Filtrate, trasferite in una salsiera, e buon appetito! (Troverete che il gusto del vino è sottile ma assolutamente delizioso.)
   Ingredients

1 pork loin, c. 2.75-3 lb
14-18 oz. bacon, thick-sliced
fresh herbs (I used winter savory)
4 cloves of garlic, quartered lengthwise (i.e., slivered)
salt
freshly ground black pepper
a pinch of freshly grated nutmeg
extra-virgin olive oil (or lard)
2 large onions, quartered
1 C pork stock (see above)
1 C white wine

Preparation

With a knife, pierce the loin and insert the garlic slices. Cover the loin with the salt, pepper, herbs, and nutmeg. Wrap the loin with the bacon. Fasten the bacon to the loin with butcher's twine. (Simultaneously, do the same to the bottom side. You can decide the best way to accomplish this feat!)

Grease a roasting pan. Add the loin. Arrange the onions around the loin. Add a drizzle of oil (or a dab of lard) over everything. Add the stock to the pan.  Cook at 400 degrees for about an hour.  (Depends on the size of the loin.) Turn the loin over at the halfway point.

At the very end, add the wine to the pan, raise the heat to the highest setting, and brown each side of the loin for 2-5 minutes (to give it a nice color, not to burn it).

The meat is ready when the internal temperature is 155 degrees.

Remove the loin and the onions from the pan. (But leave ALL the rest of the goodness in the pan.) Place the loin on a cutting board, cover with aluminum foil, and let rest for 10-15 minutes before cutting.

To make the gravy

Ingredients

flour (I used whole-wheat)
pork stock

Preparation

Put the marvelously dirty pan on two jets. Add flour, approximately the same quantity as the fat (even if that is difficult to calculate. Roux always consists of flour and fat in equal quantities). As soon as you add the flour to the pan, immediately begin to scrape the pan with a steel spatula. Add the stock as necessary. Stir well, always scraping the pan. Filter, transfer to a gravy boat, and buon appetito! (You will find that the flavor of the wine is subtle but absolutely delicious.)

Mattinata Siciliana

Si potrebbe diventare molto dipendente da guardare la Mount Etna webcam dalla Villa Ducale di Taormina. Specialmente all'alba! Ogni minuto la scena è diversa! Nessuno di questi screenshot che ho fatti è colorizzato. Sono esattamente come sono apparsi sul mio schermo.

Queste strepitose foto mi hanno fatte ricordare una canzone poco conosciuta ma assai bella, "Mattinata Siciliana", incisa da Gigli nel 1947. Cercandola, ho scoperto un'altra registrazione della stessa canzone che non sapevo esistesse, da Gianni Poggi (uno dei migliori tenori del suo tempo). Godetevi questa bellissima canzone, che credo troverete si abbina molto bene con le foto!
   One could become quite addicted to watching the Mount Etna webcam from the Villa Ducale di Taormina. Especially at dawn! Every minute the scene is different! None of these screenshots which I made are colorized. They are exactly as they appeared on my screen.

These stunning photos reminded me of a little known but beautiful song, "Mattinata Siciliana," recorded by Gigli in 1947. In searching for it, I discovered another recording of the same song which I didn't know existed, by Gianni Poggi (one of the best tenors of his day). Enjoy this gorgeous song, which I think you'll find goes very well with the photos!
