What an amazing era to live in! In the olden days, if you wanted an old traditional recipe, either you consulted a cookbook, where the recipe was complicated beyond recognition, or you searched for an Italian who maybe did or maybe didn’t remember Grandma’s ingredients. (Undoubtedly he forgot that Grandma used lard instead of olive oil...)
But today! We can go to YouTube! We have to wade through many Toms and Dicks and Harrys and Joe Schmoes. But then! We find Nonna! Bellissima Nonna! Not just any grandma – the grandma that still does things the old way. I went ahead and saved you the trouble: I have done the wading for you. I present to you a series of videos of Grandma, showing us the recipes not of today but of yesterday. |
LA BELLISSIMA NONNA XII
Autenticissimi tarallini pugliesi!
Very authentic Apulian tarallini!
| Here the beautiful Nonna Maria, age 90 (!), shows us the old, authentic recipe for Apulian tarallini! Taralli are famous throughout Southern Italy. The recipes vary greatly throughout the different regions and provinces. However, certainly the tarallini from Apulia have always been my favorite! I love the ones with fennel seeds, the ones with cracked black pepper, the ones with crushed red pepper, and the ones with pizza flavorings. All four are popular in Apulia. However, the original, classic tarallino pugliese has two principal ingredients: olive oil (not lard) and white wine. The oils and the wines from Apulia are absolutely out of this world! I can think of no greater snack in the world than tarallini pugliese with a little cheese, a little salami, and slices of raw fennel, and a clementine. |

Barilotti

) Ingredients

Barilotti ("little barrels") are a pasta shape that here in America is gaining in popularity, thanks to Wegmans supermarkets. Another American chain, Dorothy Lane Markets, also sells it. However, it appears that both American companies obtain the product from Pastificio di Bari Tarall'oro, a wonderful pasta maker founded in 1982. Unlike other pasta makers who use "the best wheat in the world" (translation: wheat from outside of Italy!), Tarall'oro gets all of its wheat from Le Murge, a beautiful plateau in the regions of Apulia and Basilicata. Barilotti is a homestyle pasta shape, made with the thumb against a gnocchi board. Basically, they are a thin gnocchi, that is gnocchi made with a normal pasta dough – water, semolina, and salt, that's it (no potatoes, no ricotta, etc.). The beauty of the following recipe is that, besides the pasta, the only ingredient that needs to be cooked is the garlic. (Theoretically you could use raw garlic ... But this is something that is done rarely in Southern Italy and never in Northern Italy. In this dish the sauteed garlic is tastier and less overpowering. However, if it is a hot day in August, and you don't want to turn on the stove ... ) Ingredienti

Those who cannot sleep, think In Bisceglie there is a proverb: “The bed is named Rosa. He who does not sleep, rests.” But there are those who cannot sleep. They think about the debts, about those who are far away, about the wife of another, about the hit they must make the next day, about the fellow pimp, about the tyrants, about the ones they want to keep under their feet, about their lover, about time, about the condemnation that awaits, about the day that they get out of jail, about the pension that is not enough, about the work they cannot find, about the fortune that never comes, about the hope for a cure, about revenge, about when those who have done evil will die, about the government that changes and changes, and always plays the same sonata. Few are those who think about doing good, about a world in peace, quiet and serene, and often they say, “When will it be?” English translation: L.C. |
