Fusilli bucati ai cinque formaggi / Hollow fusilli with five cheeses



Ho usato i formaggi che mi è capitato di avere in frigo. Potete usare qualsiasi formaggio che è di buona qualità e che si scioglie bene. Un formaggio al pepe, rosso o nero, è perfetto. E non aver paura di usare un po' di formaggio erborinato.

Ingredienti

500 g fusilli corti bucati (o un'altra pasta che vi piace)
4 o 5 formaggi frescamente grattugiati (io cheddar al pepe nero, Emmenthaler, ricotta salata, pecorino, parmigiano)
panna (oppure latte + burro)
pepe nero o rosso se non c'è già nei formaggi
noce moscata frescamente macinato

Preparazione

Fate cuocere la pasta nel modo normale.  Per i formaggi: la fiamma è sempre molto bassa. Non state cuocendo; state sciogliendo. Fate scaldare la panna (o il latte + burro); aggiungete gli altri ingredienti, e quando è sciolto è pronto!

Attenzione: se usate latte invece di panna, è anche più importante mantenere bassa la fiamma. Sennò, il latte coagulerà.

   I used the cheese that I happened to have in the fridge. You can use any cheese that is of good quality and that melts well. A cheese with pepper, red or black, is perfect.  And don't be afraid to use a little blue cheese.

Ingredients

1 lb hollow fusilli (or another pasta that you like)
4 or 5 freshly grated cheeses (not pre-grated. I used cracked pepper cheddar, Swiss, ricotta salata, pecorino, and parmigiano)
cream (or milk + butter)
black or red pepper if it's not already in the cheeses
freshly ground nutmeg

Preparation

Cook the pasta in the normal way.  For the cheeses: the heat is always very low. You're not cooking; you're melting. Heat the cream (or the milk + butter); add the other ingredients, and when it's melted it's ready!

Caution: if you use milk instead of cream, it's even more important to keep the flame low.  If not, the milk will curdle.
